No, using the above script won't delete user appointments (as these are documents in the database, and what we do is remove the calendar Profile Document only), it will however reset preferenes, settings such as Meeting Duraton, Working days, Personally set values that could be important, and that will have to be set again afterwards.
In order to modify standalone or a chosen set of values normally you would have to write an agent to go for the specified fields,
